Rooji The Foodie is a Yorshire baker whose scrumptious desserts bring joy and comfort. For 10 years the solopreneur has been sharing her recipes, she has exclusively given MWN Hub one of her popular recipes – ‘Date Truffle.’ As dates are the staple, must-have item of food on the table spread of households observing fast, this dessert is sure to be a treat. It's a quick and easy-to-follow recipe that will most certainly be devoured within minutes!

 

Ingredients

 

260g Holy Land Dates Medjool Dates

300ml Boiling water

100g Desiccated coconut

50g Peanut butter

200g Good quality milk chocolate

 

Method

 

Soak your dates in boiling water and let them stand for 15mins.

 

Drain the water and remove the seeds.

 

Place the now soft dates into a food processor, add the peanut butter and coconut before pulsing into a paste.

 

Remove the paste from the processor and roll out truffles from the mixture. Refrigerate for 10 mins.

 

Melt the chocolate in the microwave at 30 second intervals before dunking each date truffle into the chocolate.

 

Tip: Use two forks to balance the truffle on, interlock the forks at the bottom to allow the excess chocolate to drain.

 

Place the coated truffle on a tray and sprinkle with a little desiccated coconut (optional).

 

Refrigerate for 30 mins before serving.
